I have some fermenting right now. It's been active for a little over 2 weeks. Nice bubbles, no mold and smells good. While I do enjoy the taste of homemade kraut, my main goal is to promote gut health. I've had bad back acne my whole life, and while paleo has helped a little, I still have a long way to go.
Lactobacillus Plantarum vs. Lactobacillus Brevis. Correct me if I'm wrong but plantarum growth occurs during the 2nd stage of fermentation while brevis is the final stage? My question: Should I take a little out and start eating right now providing that it's been fermenting for a little over 2 weeks? Are there benefits to be gained from ingesting the plantarum strain?Or is it best to wait the full 4-6 weeks before even touching the the kraut?
Btw this is my 2nd attempt at fermenting vegetables..my first attempt was a huge success. It even tasted amazing...cabbage, radishes, parsnips, garlic, and carrots. I finished it like 6 months ago though..i don't even remember if it helped my acne.
