Sugar or Starch?

Can anyone explain why I can eat a tub of ice cream or lots of chocolate everyday with no apparent issues but if I add 'safe' starches instead I start gaining body fat within days?

In both cases we're talking about adding in 100g carbs to a high fat diet and activity level stays the same
