Gelatin would be just fine. Jello is allowed on a clear liquid diet, and any form of gelatin would be OK - Great Lakes would be much better than Jello!

sea salt has 8ppm I, which is not enough. I do not worry about it much because all the animals I eat got mineral supplementation, and also I get fish a few times a week. Occasionally I do eat seaweed.

They're fine if you don't have problems with nightshades, and don't mind the carb load.   Avoid the skins, that where the solanine lives, also avoid any green potatoes, which are sign of high solanine.
