Paleo Eggroll or Wonton Wrappers?

Craving eggrolls and wontons, there doesn't seem to be a way to make paleo/primal wrappers. The closest I have seen is a gluten free wrapper that still uses either rice paper/rice flour/tapioca flour. I don't understand why almond meal or coconut flour might not work for making wrappers, is it because it won't stand in oil or boiling water, but only works in baking?

Gluten is the difference, that's what makes things crispy

Why are you avoiding tapioca? Why not wrap them in lettuce?

You might try these coconut crepes/pancakes (http://www.mypaleolife.com/paleo-diet-recipes/paleo-coconut-flour-tortillas) and see if they can hold up for what you want to do. They're pretty decent, though I don't do coconut flour anymore.
