Sounds like you might have the wrong gut flora, or a parasite.Try making and eating more home fermented foods. kraut, kvass, pickles, kimchee, kombucha (not the commercial stuff).

Sometimes I get poops that leave a never-ending trail on my toilet paper. Other times, I wipe and realize I didn't even need to because there's nothing there. What causes these no-wiping-necessary bowel movements?

Chocolate (like coffee) increases gut motility, so that could make your stools softer. If your reaction is strong, it's also possible you have an intolerance.
