Is it healthy to eat this for breakfast frequently?
Simple, cheap, and fast. I think I have way more energy doing this compared to when I ate a bowl or two of Kashi Go Lean cereal with Organic Whole Milk + banana and juice.

Looks good to me. When I make fried eggs I use coconut oil and when I make scrambled I use butter. When I do drink apple juice I juice it myself and then filter it. I do the same with orange juice with the filtering thing. Juice at least in Germany is mostly direct pressed. Some of it has pulp some of it doesn't depending on how it was juiced so if I buy juice from the store I'll usually run it through a filter to get the cellulose out. I use a really fine strainer or cheese cloth for the filtering. Rotate your whole fruits. I also usually have a cup of coffee with a 1/4 teaspoon of eggshell powder, cream, and sugar.
But yeah looks good to me, I eat that for breakfast pretty regularly, I usually have milk and a bit of white cheese (like a 1-1.5 inch cube) as well. Even aged cheddar over here is white.
As far as I'm concerned fruit is fine. I'm pretty sure being a primate that we were eating plenty of fruit and leaves before animal products. I like figs as well, but those can be expensive, they are about 1.50 euro per fig over here! Ripened apricots are good for breakfast too.
I would skip the glass of apple juice. For sure better than Kashi Go Lean that has soy in it.

Just be careful with juice and fruit. That would be your total fruit servings for one day. 2 servings per day is what is good guidline. I agree with everyone on the juice though. You're better off just eating the apple.
