I finally and successfully started paleo. Ice done this before with great success after an injury. After the weeks this time the expected stall occurred. I do crossfit, get about 250gm of protien a day, 30 to 70 carbs ftom veggies or some fruit a day. I saw on the crossfit forum that to kick start the stall to have a cheat day then go back to normal eating. Any opinions? I'm feeling guilty just thinking about it.

The first 2-3 weeks on Paleo, people lose weight rapidly, but it's not fat that you lose. When you stop eating wheat and other starches, your body lets go of several pounds worth of water weight. I don't know how long you were out of commission due to your injury, but it's possible that you've "stalled" because you simply ran out of excess water.
Your weight loss should continue if you keep doing what you're doing. Keep in mind that, even if you cut starchy foods, your body will start converting protein to glucose, raising blood sugars and causing some of the same problems that eating high-carb food would. Don't go overboard on the protein! And ultimately, it's more about how healthy you feel than your weight :)
What about calories? I mean, that's what maters most! Other helpful info: height, weight, goal, bodyfat %, daily activity, etc…
3 weeks in, it's too early have experienced a true plateau. Most likely you're simply depleted your glycogen (carbohydrate) reserves, and now the 'real' weight loss (i.e. fat loss) begins. Glycogen is packed in water, so when you use it up, you lose a lot of water weight along with it.
250 grams of protein is excessive… That's 1000 calories form protein. Too much, you only need 75-125 grams per day for general body regeneration, towards the higher end if you're lifting. Carb-wise, target 100 grams or so. The remainder should be fat. If you feel like you're dragging too much energy-wise, up the carbs progressively until you feel better. How much matters, paleo is not magic, calories still count.
