Can I use millet flour as a substitute for almond flour.? I usually use coconut or sunflower seed flour, but I currently have no access to either of the products.
Nut & alternative grain flours are totally icing on the proverbial paleo cake. Their only advantage is that they are gluten-free. If that's your primary concern, then go for it.

I would go with a banana. The protein and fat from the egg won't help/digest fast enough, and the sweet potato takes a while to digest as well. Have a banana 30 min before and you should be fine
