making cheat biscuits for carb-hungry kids

im looking for a way to replicate pillsbury cresent rolls for my kids who love carbs and pigs in a blanket. I personally love the PiaB recipe from Gather (made with almond flour) but my kids dont. I have potato flour/arrowroot/tapioca flour/coconut flour.

I think one of the online recipes for Brazilian Cheese bread would fit well. It's pretty tasty and the only difficult part would be that as I recall it wasn't a firm dough. You could probably make it work by adding the pigs into the muffin tin after pouring some batter.
