Coconut milk kefir

I want to make some coconut milk kefir, but the only coconut milk I can find where I live shows the ingredients as coconut extract (sometimes coconut kernel extract) and water. Sometimes with extras like guar gum, etc. Needless to say, I will skip the latter.

My question is - is this what I should expect from a tin of coconut milk, or what should I look for? Is there a difference between coconut extract and coconut kernel extract?

Thanks!

Thanks. I just wondered if there was a product out there which is just plain coconut milk - but if this is good enough, I will give it a go!

i use the trader joe's coconut milk for kefir. it works fine. i think it's just coconut and water. coconut extract is still coconut. the less ingredients, the better.
