Sprouted buckwheat can be toxic if a lot is ingested...especially if the sprouts are juiced. The condition is called fagopyrism...meaning the skin becomes overly sensitive to natural sunlight. Itchy, easily sunburned, achy joints, dry skin.
Another indication that the "healthy" vegans and vegetarians have got it all wrong.

If its a pancake alternative you are looking for, try coconut flour. That said, like Jaime, we use it occasionally especially when the youngster wants fluffy pancakes.

Ok people you need to learn a little more about the whole roasted buckwheat groat. It is technically a grass not a grain and nowhere near as "starchy" as you people seem, quite erroneously I might add, to think. Or perhaps it is not thinking and not researching properly hat is the problem.
Buckwheat is pretty good source of starch (i.e., it has a low amount of omega 6 oil and a high mineral content). Try sprouting and/or fermenting it before you eat it.
Sweet potatoes are great too. They seem to give me reflux, which I ascribe to their fibrous nature (produces gas). Otherwise, they are good for the same reason as buckwheat.
Hemp seed or flax seed is an ok way to supplement some extra omega 3s, but don't eat lots of it -- too much overall PUFA (3 and some 6).
