FWIW, I think egg safety is a reflection of where the eggs come from. It might be completely unfounded, but I feel a lot safer when eating free range eggs that came from the farm down road then battery eggs from a huge commercial operation.

Considering the egg whites are mostly water and a little bit of protein, and I only needed to use the white (for instance, a recipe) does it matter if it comes from a conventional egg? They are much cheaper, and they make slushies nice and foamy. (more)

They are all in the yolk. The whites have no fat at all. But you might not need extra protein from added whites, unless you have a specific reasoning for it.
