I made grilled chicken breast with guacamole smothered on top and a MOUNTAIN of wilted kale. It was delicious!
Either cauliflower crust pizza or leftover chili.
Noshing on this week: "Greek" meatloaf with creamed spinach; red coconut fish curry. Completely stoked with both.
Carne asada, avocado, and roasted broccoli.
I had soup loaded with chicken and tons of veggies.... it's soup weather in the North East :)
Today will probably have a big ass salad and maybe some steamed cauliflower. For some reason I have not felt like eating a lot of meat lately.
