Food from cans?

I'm trying to track down the foods/chemicals triggering my autoimmune disease. Could it possibly be the chemicals from canned food? I know that some people can be really sensitive to the chemicals in the lining. Since I buy all organic, and buy the top quality coconut milk - could this still be a problem? I also eat tons of canned fish.

If so...I may have to learn how to crack open a coconut. :)

Eating wild caught canned and frozen from highest quality sources. Examples: Wild Planet, Whole Food's 365, etc. I don't have a gluten allergy after much testing. I think it's a problem with starch for those w/ AS.

I get it at my local Asian grocery store. They've got about 5 brands, but Phoenix Barge is the only one without extra ingredients.

Vitamin D was definitely low, but I now supplement w/ cod liver oil and Vitamin D Carlson drops. I also make a habit of getting more sun. I have ankylosing spondylitis (arthritis of the spine). Causes bizarre symptoms. I'm currently on a drug similar to remicade (Humira), but if I can figure out how to control my condition w/ diet, I'd love to stop taking it!

I've read about some weird stuff they do to foods that are frozen or go into cans. It's hard to say exactly what was done in processing because they don't have to tell you about it on the can. For instance, often they use acid to strip peels off of fruits before they can the fruits. I just found out about that last week! So there are probably a lot of other things they do that I don't yet know about.

Tropical traditions sells some coconut milk and cream products in glass. Ggod luck with the hunt for bpa free foods. AS and starches are definitely linked, but reinvestigate gluten if the bpa thing does not pan False negatives for gluten tests are not uncommon.

I have heard of people controlling their AS with diet. The main problem they have is trace gluten. You've got a very careful food log going? It can take some reactions up to a week to show up.

You may want to check out a forum called glutenzap, they test foods for very small amounts of gluten. I believe that Native Forest coconut milk is on their ok list.

The Carlson vitamin D drops are not on their ok list. Source Naturals 1000's are on the ok list.

Lots of BPA in cannced foods, but I don't think BPA causes autoimmune diseases. How's your vit D level?

I'm pretty happy with the brand of canned coconut cream that I buy. It's called "Phoenix Barge" and the only ingredients are coconut milk and water.
