Since starting CrossFit and Paleo, I've been losing too much weight. In an attempt to gain weight, I have significantly upped the quantity of the foods I eat, as well as drinking a shake every day that consists of one can (about 14oz/900 calories) of coconut milk, among other things. Is this too much coconut milk? Are there any negative side effects that this will cause? If so, how much should I use?

Personally I wouldn't drink an entire can of Coconut Milk, I surely don't need all that fat. Consider that maybe Crossfit is too much exercise for you if it and Paleo is causing weight loss beyond what you consider healthy for you. I think a simple weight lift and movement based routine is more appropriate for the majority of people.
Weight management is all energy balance. Adding in 1000 calories of coconut to your diet daily, sure, that might be effective in increasing energy to balance, but there's more think about than that. Fat isn't the end-all best macronutrient to consume, nor is coconut oil the only fat you should be consuming.
How about some starch? Potatoes and rice? Toss on some butter and olive oil for additional calories. Don't do all sweet potatoes, unless you like looking like an oompa-loompa.
