Ive decided I want to be in ketosis for most if not all the time. I have alot of inflammatory/autoimmune issues and there is not a single one that is not greatly improved while in ketosis.
I'm struggling alot though with breaking the ketosis. Im aware of the protein issue, but I'm wondering if I'm accidentally eating too many carbs.
What vegetables and fruit do people usually eat on ketogenic diets?

Log your food and count your carbs. Simple as that. You can eat enough "approved" fruits and veggies to kick you out of ketosis, so you have to count.
