Only if it is paleo bread and even then I would be careful if weightloss is your goal. It is easy to fall back into old habits. Gluten free bread tends to be loaded with starchy grains and calories and carbs.

I suppose one could cavil at the likelihood that your rinds were from factory-raised pork, but you're not adding weird not-really-food ingredients like guar gum or carageenan to improve texture, so it doesn't seem too faulty to me.
